The Origin of Com Hen

Com Hen has become a famous and popular dish in Hue. Previously, this dish was reserved for poor families before becoming a specialty offered to the Nguyen Dynasty kings. Com Hen has existed for 200 years. One day, a Huynh family couldn’t catch anything, so they ate cold rice and mussels. From that day on, thanks to the special taste of Com Hen, this dish has become popular among the people of Hen Islet in particular and the people of Hue in general.

During the reign of King Thanh Thai, Mrs. Nguyen Thi Thep used mussels harvested from Hen Islet to prepare a dish called Com Hen and presented it to the king. After enjoying it, the king was impressed by its taste. Since then, mussel rice from Con Hen has become a royal gift on every holiday and New Year.

Making Com Hen

The best mussels are those caught in Con Hen (Vy Da ward, Hue city). Currently, there are very few mussels in Hen Islet. The captured mussels are soaked in rice water to remove sand and soil. After that, they are boiled with a little salt and ginger to make the water fragrant and rich in flavor. The mussels are then taken out and the shells are separated, keeping the mussel juice. Spices are added and the mussels are stir-fried.

Cooled rice with separate grains is used. Season to taste, including pork rind (dried and then fried pork skin), roasted sesame, a little chili sauce, and mixed vegetables. The indispensable spice is Ruoc Hue.

Enjoy Com Hen

Com Hen is very simple and easy to make but requires a lot of ingredients and time to prepare. People put vegetables in a bowl, then add cold rice, stir-fried mussels, and spices such as pork rinds, roasted sesame, roasted peanuts, and seasonings to taste. It is accompanied by a cup of mussel broth. The dish is simple but very attractive, making people want to eat it again and again.

Besides Com Hen, you can also enjoy Bun Hen and Mi Hen.
