6. Specialties when traveling to Sin Ho

6.1. Under-armpit pig (badger pig)

The name “armpit pig” (in some places called badger pig) is a specialty pig found only in highland areas. Each animal weighs about 10-15kg, any large animal is only about 20kg. Eating “armpit” pig meat is no different from eating wild animal meat without breaking the law, because this pig species is released into the forest from birth to find its own food to survive.

Because they are not nourished, badgers are super slow-growing, they only gain a maximum of 10 kg each year, and then barely gain any more. Because they eat grass and plants and grow slowly, their meat is very delicious, with almost no fat, and any piece with a little fat is not greasy.

6.2. Purple sticky rice

Purple sticky rice is made by the skillful hands of Thai and Day women… with their own secrets. From the fragrant upland sticky rice grains, the large grains are not sticky, and have a sweet fragrance, wash them clean and soak them in plain water for 6 – 8 hours.

The distinctive and attractive purple color of sticky rice is dyed with a plant called Khau plug (this plant is only found in mountainous areas). The Khau plant is cut off, leaves are washed, and boiled. Boil the leaves for about five minutes. When the water turns purple, it’s ready. Let the leaf water cool down, then add some sticky rice and soak for another 2 to 3 hours.

6.3. Sin Ho black cake

Black cake is made from glutinous rice and tang tree, the filling uses pork belly mixed with cardamom and mac khen, all wrapped in rattan leaves.

6.4. Hmong rice cake

According to the H’Mong people’s concept, day cake is a symbol of the moon and sun, symbolizing the birth and growth of the vast universe. Besides, the cake is also a symbol of purity, loyalty, and beauty of Mong women like a closed circle.

H’Mong people often make banh day on Tet and festivals. Offer to the ancestral altar to express your respect, with the hope that the gods will bless you with big and strong legs, so you can cross mountains, row passes, and clear fields for farming. Bless a bountiful harvest and a prosperous and happy life. When enjoying, people cut the cake into slices, then paste them with lard.

When the cake is puffed up, the aroma of upland sticky rice blends with the gentle aroma of chicken eggs and the fatty smell of lard spreading throughout the small kitchen, creating an extremely attractive dish.

6.5. Black banh chung (black sticky rice cake)

Black Chung Cake (Rua Chia). Dao people’s banh chung is wrapped in round shapes, about 30cm long. You can use white or black sticky rice to wrap it. When wrapping banh chung, people often mix crushed mandarin tree charcoal to have a unique delicious taste. The filling for the cake is long strips of sliced fatty meat stuck with cardamom powder, so that when the cake is cooked, the fat will absorb evenly into the cake and have a very delicious greasy taste.
