Banh Ap Chao – A Rustic Specialty of Cao Bang province

Ap Chao cake (Banh Ap Chao) has a crispy outside crust and rich, sweet duck meat inside. This Cao Bang specialty dish is loved by many people because of its delicious flavor that cannot be mixed with any other cake. Let’s learn how to make cake right below.

Ingredients for making Ap Chao cake

  • 300g boneless duck meat
  • 350g rice flour
  • 150g glutinous rice flour
  • 200gr raw vegetables
  • Spices: Cooking oil, seasoning powder, soup powder

How to make Ap Chao Cake?

Step 1 : Prepare ingredients

When you buy boneless duck meat, wash it and cut it into small bite-sized pieces. Next, add a little soup powder to the meat, stir well to let the spices absorb and then put it in the refrigerator.

Step 2 : Make cake dough

Take a big bowl, add rice flour and glutinous rice flour and add a little seasoning to make the dough richer. Then, mix the two types of flour together and add a little warm water, continue mixing until the flour mixture becomes smooth, with no lumps or lumps left.

After mixing, use your hands to knead the dough until it is smooth and no longer sticky, then put the dough in a bowl, cover with plastic wrap and let it ferment for about 3-4 hours.

Step 3 : Fry the cake

After the duck meat has soaked in the spices and the dough has finished incubation, you proceed to fry the cake. You put 1-2 tablespoons of dough in the mold, place the duck meat in the middle and add 1-2 tablespoons of dough on top so that the duck meat is in the middle of the dough. Next, place a non-stick pan on the stove and pour in oil so that it covers the surface of the cake. When the oil boils, put the cake mold in to fry.

When the outer dough layer of the cake is firm, take the cake mold out. Wait for one side of the cake to brown, then flip the cake over to fry the other side. When the cake is golden brown, take it out to drain the oil or place it on a plate lined with oil-absorbing paper. Continue doing the same steps until you run out of dough and filling.

Step 4 : Finished product

The golden fried cake is picked out on a plate, cut into bite-sized pieces and then enjoyed with raw vegetables and rich spicy and sour fish sauce. It can be said that this rustic dish has a wonderful blend of flavors, stimulating the taste buds.
